Healthy lunch on the go, in glass jars!


It’s January and for many of us this month heralds the inevitable backlash against the indulgence of food and drink during the Christmas period. While there’s no shortage of advice on getting fit and healthy: gyms, the latest diets and the new super-foods, the expense, time and effort these things take can be overwhelming.

 

We have a simple and easy idea that ticks lots of boxes. A sustainable, money-saving and time-friendly solution: make delicious and healthy one-glass jar meals for the working week. (Hint-it will also save on the washing up!)

 

MONDAY

Courgette Noodle Salad

It is the general consensus that breakfast is good at any time of the day and this is no exception to the rule. Rich and creamy with vegan-friendly almond milk (or cow’s if you prefer), make first thing in the morning and you’ll have a cheap, filling and delicious meal to enjoy when you need an energy boost. Perhaps after that lunchtime spin class you said you’d go to?
